In Your Restaurant PLAN for the Big Days – Part 1
By David Scott Peters
Restaurant Tip of the Week
Gather the right tools to plan
Every restaurant is impacted by the BIG holidays every year, such as Valentine’s Day, Fourth of July and Christmas. Many restaurants have their own BIG days, such as special parades, city holidays, or cultural celebrations. Planning for those days helps you net the most potential from them. Grab your daily sales forecast for the month, a calendar, event planner and reservation book. Go down the forecast day by day and write in any holidays, catering events, large reservations and special events next to the appropriate day. Then go to your sales log and look at the sales for those days for the last two years (if available) and look for sales trends and variations. Take note of which holidays impact your business and which ones you can take better advantage of to start planning for the BIG ones. Mother’s Day is coming up. Is it a BIG day that impacts your restaurant? Are you ready?
