Why would you pour a draft beer in a glass and leave a one-inch head? The answer is the three Ps:
- Presentation – a draft beer that has a one-inch head looks appetizing. Just like a plate that comes out of the kitchen, beer needs to look good to drink.
- Protection – a draft beer will keep its carbonation longer.
- Profit – one inch of head (foam) is two ounces of beer.
