The purchase allotment system will allow management to order what is needed to operate smoothly, while staying within the budget, and to recognize and correct problems before the end of a period. NOTE: To gain full advantage of this system, a restaurant should pay for all of its raw products, food and liquor, by COD. There are four rules that are critical to its success:

1. Cost of goods sold targets have been budgeted
2. Inventory levels are worked up and down to a target level
3. Sales forecasts have been created for each day of the month
4. Sales are tracked by major category on a daily basis
